CAULIFLOWER STEW

This cauliflower stew is one of my favourite meatless and a simple recipe that relies solely on the natural flavors of the vegetables. You can serve this with rice, yam or eat it as is if you are watching your weight.

Ingredients
  • 1 large cauliflower
  • 2 fresh tomatoes
  • Olive oil
  • 1 onion
  • Salt
  • Chili peppers
  • garlic
Instructions
  1. chop your tomatoes, onions and cauliflower
  2. heat your vegetable oil and add your chopped onions and tomatoes to fry
  3. cook for about 3 minutes and press tomatoes with a fork to crush out the juices
  4. allow the juices to simmer for another 2 minutes
  5. add your salt, garlic and any herbs you usually cook with
  6. leave it to cook for a further 7 minutes before serving
