Egg plant or aubergines are naturally full of flavour. I often relie on it solely to add taste to my cooking. Egg plant can be cooked by frying, baking or in stews.
EGG PLANT STEW

PS most people chop up aubergines well in advance, spread it with salt and leave it to sit for some hours. This is believed to draw out the chemical that results in causing it to be bitter.
- 1 onion
- 2 tomatoes
- 2 aubergine
- heat oil for about 3 minutes on low heat
- chop onions and tomatoes and to the oil and fry for 1 minute
- cut aubergine into slices and add them in allow everything to cook for about 4 minutes or till all the vegetables are tender and its juices are bursting out
- add salt and pepper to taste and stir
