I am not a fan of using stock cubes in my cooking, however when I am cooking for other people or cooking recipes that are bland with little or no flavour of its own, I like to add my home made alternative vegetable stock which is really a simple blend of vegetables, a little salt, herbs and peppers I make to keep in ice cube trays in the freezer for when I need them. My favourite vegetables for making a nice home made vegetable stock is aubergines. Aubergine naturally adds a really characterful flavour to cooking so it is my number one choice when I make these little food flavour bombs. Tomatoes, onion and chilli also gives a very nice flavour.
With traditional stock making, you will cook your vegetables and create a fluid broth but with these food flavour bomb stock, you only need to add as much water to allow it to blend to a smooth consistency inside the blender without overworking your blenders motor. You have to aim for a thick puree, so that you can add them to mashed recipes also or to home made baby food.
FOOD FLAVOUR BOMB HOME MADE ALTERNATIVE VEGETABLE STOCK
1 medium size aubergine
1/2 a large onion
1 bag of spinach
pinch black pepper
chopped broccoli / cauliflower
250g / 1 mug of water
wash and boil all your vegetables for 5 minutes with salt
place into your blender
add 1 mug of water and start blending
add some more water but be careful to not over do it.
when everything has been blended to a smooth consistency, you can now pour into ice cube trays
store in the freezer and use a cube or more to recipes
Two days after Christmas in our house we still have quiet a bit left over Christmas food so I decided to simply put everything together in a way that it looks appetizing and new. Otherwise no one would really touch, the family had been forgiving eating left over Christmas food on boxing day but the third is tricky so I had to stretch my imaginations a bit. The only thing to make with cooked potatoes, tiger prawns, bacon and salad is really potatoes salad which is very nutritious with all the trimmings.
When you make this recipe, you can of course use fresh ingredients, I’m only using already cooked ingredients based on what I have left over from Christmas. The aim is certainly make your food look completely different from so you can entice everyone with it.
REHASH LEFT OVER CHRISTMAS FOOD TIGER PRAWNS POTATO SALAD
Cuisine: left over Christmas food
you can add freshly cooked potatoes if you dont have enough left over potatoes
8 tiger prawns
8 large potatoes
half large red onion
marula oil (or any vegetable oil of choice)
3 tablespoon of salad cream
1 tablespoon of humus
slices of bacon(turkey, chicken and any other left over meats)
[b]PREPARING THE SALAD[/b]
rehash the potatoes by boiling water in a kettle and pour it over your potatoes before bringing it to the boil till the water boils in big bubbles over the potatoes
scoop the potatoes out of the water into a clean bowl and crush them with a fork into a mash
add your lettuce, tomatoes, onion and carrot all chopped to the mashed potatoes
add a scoop of humus and some salad cream and mix together
[b]PREPARING THE TIGER PRAWNS[/b][br]
wash your tiger prawns if you are using fresh and parboil for 4 minutes
if your tiger prawns have been precooked then simply rinse thoroughly (I eat every part of prawns so I leave the head, tail and shell in tact)
heat your oil in a frying pan and lightly fry the prawns in the oil when it is very hot for 4 minutes
turn the tiger prawn on both sides allowing it cook on either side
take prawns out of the oil and wipe with tissue paper or drain excess oil in a colander
you now serve your delicious rehash Christmas left over
This fish soup recipe is suprisingly a nice warm filling soup for an autumn day pick me up. It is also prepared in fairly quick time. I had two sheets of roasted seaweed for rolling sushi and about 2 teaspoon full of Clearspring sea salad dried sea vegetables so I just added the two for extra texture.
If you are not a mackerel fan then you can simply use seaweed alone for a bit of texture for your soup.
TOMATO AND FISH SOUP RECIPE

You may simmer and serve your mackerel and tomato soup as a thick soup or cook as a light soup. To make a light soup add a little bit more water after the initial 10 minutes cooking. You can also replace mackerel with any other fish or leave it out.
