Infusing fruits in wine is the best way to enjoy a wine that is hard to drink, usually a cheap bottle. Once fruits have infused with the wine you can choose to remove the fruit pieces out or leave them in. Red wine cocktail is best to make with 1 brand of wine and infuse with fruits such as pineapple and tangerine unless you are a wine connoisseur rather than mixing different wine from different brands. Wine cocktail is also best enjoyed cold so even though you will need to boil the wine to tame its taste, help fruits to infuse quicker from the heat and loose some of its alcohol through evaporation your wine cocktail taste better when it has been frozen.It is also best to not mix different wines like you would with regular cocktails where different drinks tends to be mix together. This recipe is made with an infusion pineapple and tangerine but you can use other fruits too such as kiwi, melon, apple, pear, maybe tomatoes even etc.
The best fruits to use are softened fruits that you may have had sitting in the fruit tray for sometime. Too much fruit will easily spoil your wine cocktail so it is best to not get carried away as too many fruit pieces will destroy the flavour of your drink.
- bottle of red wine
- 1 full pineapple
- 2 tangerines
- 2 cloves
- small piece of ginger
- start by warming the wine in a sauce pan for 5 mins
- add slices of the tangerine and pineapple
- allow to heat for another 5 minutes to infuse the fruit juices
- crash 2 cloves and add (ginger optional)
- turn off the fire and allow to cool before transferring to the fridge before serving at a cool temp
