SPICY SUNOMONO CUCUMBER SALAD

Cucumber Sunomono salad

Sunomono cucumber salad is eaten as a starter in Japanese cuisine but it is filling and very refreshing so it can also be eaten as a main on a hot summer day. The usual recipe calls for sugar to be added, this  omitted in this recipe.  You can also make other types of sunomono salads with sea foods, noodles and other vegetables and garnish it with Clearspring Sea Salads.

SPICY SUNOMONO CUCUMBER SALAD

Ingredients
  • 2 whole cucumbers
  • 2 scotch bonnet chilies
  • 100g vinegar (rice vinegar, malt or apple cider)
  • 2 tablespoon soy source
  • Pinch of salt
Instructions
  1. wash and slice the cucumbers and sprinkle with salt and allow it to sit for 5 minutes
  2. Wash off the salt and chop and add scotch bonnets to cucumbers
  3. toss together in your mixing bowl
  4. combine vinegar and soy source in a separate bowl and mix together thoroughly before pouring over the salad
  5. refrigerate for an hour or over night before serving
