The Best Peanut Butter Protein Balls In A Hurry Recipe

The best peanut butter protein balls in a hurry recipe is simple to make. It  only takes 5 minutes to make and it is also suitable for both adults and kids as a snack. These protein balls can be eaten as part of a meal, as a snack or by adding to your grazing bowl, added to kids lunch packs and even served at parties etc.

You may choose to replace the flour, I use toasted corn flour which is a very common flour in Ghana and parts of Africa. You can easily buy the flour in shops in London, but if you live elsewhere, then you it will be easier to search for Ghana tom brown online or on Amazon.

If it proves difficult to find toasted corn flour, feel free to make your own by baking corn flour spread out on tin foil in the oven. I personally find this extra work and so I would avoid baking my own flour. However, you can buy toasted rice flour, soya flour, almond flour or any other flour that is marketed as ‘toasted.

Peanut butter is a protein and an unsaturated butter but it is healthy and rich in vitamin E, even though it has half the vitamin E content compared to almond butter of the same amount. 1 tablespoon full of peanut butter  is roughly 100 calories, so it is a good idea to keep an eye out on how much these you eat in a day if  you are on a restricted calorie intake per day. They are great for pre workout when you want to eat something light and protein based.

As you are making these protein balls yourself, you know everything that goes in, it also doesn’t contain any unnecessary bulking agents and preservatives and the best thing is that it is a very healthy snack.

2 ingredients peanut butter protein balls
Ingredients
  • 60 g Peanut Butter
  • 44 g Toasted corn flour(you can experiment with other toasted flour)
  • optional
  • chilli sauce
  • salt / honey
Instructions
  1. Wash hands thoroughly as you will be kneading
  2. Mix together all the ingredients and knead with your hands till thoroughly mixed
  3. If the mixture is sticky and doesn’t fall apart, start rolling into balls

  5. serve when finished
Notes
You can keep your protein balls in the fridge for up to a week, but please eat them as soon as possible as it is not safe to keep food that is not preserved for too long as explained in the video.

HEALTHY ICE CREAM WITH JUST MILK & PINEAPPLE


I have now gotten over my initial pleasant suprise to discover that I can make a simple healthy ice cream that is also tasty with just milk and pineapple. I have made different versions of this simple healthy ice cream with basic one fruit and milk and combining different fruits with the milk.

This is by far the healthiest way to make ice cream. The best thing about serving this ice cream is that my little boy who is a big of fan of gelato as he calls ice cream has not indicated anything to suggest that he notices a difference between mummy’s home-made ice cream and the very rich ice his nonna treated him to everyday in Rome just two weeks ago.

Ingredients
  • 250g milk
  • 1 pineapple
Instructions
  1. peel pineapple and cut into cubes
  2. freeze the cut pineapple for 24 hours or longer
  3. when you are ready to make the ice cream take the pineapple out of the fridge
  4. allow the pineapple cubes to thaw for a few minutes to soften a little
  5. pour bith the milk and pineapples into a blender and blend till you have a smooth creamy mixture
  6. VIOLA! your healthy ice cream is ready to serve

DAIRY FREE ICE CREAM WITH 2 INGREDIENTS

Healthy banana ice cream

Healthy banana ice cream  I have barely made regular ice cream enough times to even attempt making a healthier ice cream version. Having a toddler, it is important to me to keep a balance between feeding him a nutritious diet as well as making him feel like he is missing out on certain things.

He eventually accepted my promise that I had gelato at home and I will let him have some. He helped me to make this dairy free ice cream made with just two ingredients. It turned out to be a hit with him. He has only just returned from spending 4 weeks in Rome and so I was understandably nervous about him enjoying this healthier ice cream. Although the recipe is simple, it had a creamy texture and it was not icy even in the absence of eggs and cream.
This ice cream is made with bananas that were frozen for three days. Traditional hand churned ice cream is made at home by having to take it out of the freezer almost every hour just to whip it a bit more and then place it back into the freezer.
Most normal ice cream recipe ask for the addition of a rich dairy like cream and eggs.  Early vegan and dairy free ice cream recipes substitutes these with fat like coconut oil but with this recipe you can omit coconut or fat altogether. I don’t even  think it is necessary to have fat as an additive in home-made dairy free ice cream especially if you are going to make just enough to eat instantly.

The recipe calls for the bananas to be frozen for a few days so that they are hard and when blended, the ice in the banana gives it the ice cream consistency. You can also take your pick of dairy free milk, even one you make yourself with nuts like almonds or a cereal like rice or soya.

  • 5 bananas
  • 1/2 mug full milk(dairy free milk)
Instructions
  1. cut up bananas and freeze for 3 days
  2. remove the frozen bananas from the freezer
  3. pour milk into the blender and add the bananas
  4. put the blender onand blend till everything is smooth
  5. pour into serving glasses and garnish with syrup, fruit or what you will normally serve ice cream with

 

It is a good idea to cut the bananas into small slices to make it easy for the blades to chop up and blend the banana.
