SIMPLE COUSCOUS RECIPE WITH MASHED AVOCADO

Cold weather goes hand in hand with comfort foods, staying in and watching terrible TV. My favourite comfort foods are usually anything that is mashed or anything the goes with soup. My plan is to  clear out my pantry of the different grains and pulses by making mash, soups or salad for as long as I can stand them.

This simple couscous recipe is a nice recipe for both adults and kids, you can  also easily incorporate other vegetables and mushroom if you have kids who would usually remind you that ‘you know “I don’t eat mushrooms”‘.  The actual recipe takes around 15 minutes but it will all depend on the intensity of your heat source.

You may serve the mashed couscous as a main, side or  make sandwich filling with it. To add other vegetables, simply blend the vegetables separately as a puree  stock  and add a couple of tablespoonful to the couscous when you mash it.  Whatever you use for measuring the couscous, you will need only need to use the same container to measure your  water at 1 and half. Most mugs are 250 ml so I use a coffee mug as the measuring medium.

Ingredients
  • 250g (1 coffee mug) couscous
  • 375g (1 1/2 mug) water
  • pinch of salt
  • 2 table spoon butter
  • 1 tablespoon olive oil
  • 1 whole avocado
  • 2 iced cubed vegetable puree source
Instructions
  1. put the water on boil
  2. add couscous and salt
  3. cook for 12 mins(if your heat is lower you may need to cook for longer)
  4. add olive oil
  5. add butter
  6. stir and switch heat off
  7. use a wooden laddle or spoon to mash the couscous against the saucepan
  8. mash as much of the couscous as you can to get a smooth mash texture
  9. peel avocado and cut into large cubes
  10. add the cut avocado to the couscous and mash the two together
  11. you may add more butter and olive oil if you prefer more

REHASH LEFT OVER CHRISTMAS FOOD TIGER PRAWNS POTATO SALAD

rehashed-left-over-Christmas-foods-1Two days after Christmas in our house we still have quiet a bit left over Christmas food so I decided to simply put everything together in a way that it looks appetizing and new. Otherwise no one would really touch, the family had been forgiving eating left over Christmas food on boxing day but the third is tricky so I had to stretch my imaginations a bit. The only thing to make with cooked potatoes, tiger prawns, bacon and salad is really potatoes salad which is very nutritious with all the trimmings.

When you make this recipe, you can of course use fresh ingredients, I’m only using already cooked ingredients based on what I have left over from Christmas. The aim is certainly make your food look completely different from so you can entice everyone with it.

 

REHASH LEFT OVER CHRISTMAS FOOD TIGER PRAWNS POTATO SALAD

you can add freshly cooked potatoes if you dont have enough left over potatoes
Ingredients
  • 8 tiger prawns
  • 8 large potatoes
  • lettuce
  • 2 tomatoes
  • 1 carrot
  • half large red onion
  • marula oil (or any vegetable oil of choice)
  • 3 tablespoon of salad cream
  • 1 tablespoon of humus
  • slices of bacon(turkey, chicken and any other left over meats)
Instructions
  1. [b]PREPARING THE SALAD[/b]
  2. rehash the potatoes by boiling water in a kettle and pour it over your potatoes before bringing it to the boil till the water boils in big bubbles over the potatoes
  3. scoop the potatoes out of the water into a clean bowl and crush them with a fork into a mash
  4. add your lettuce, tomatoes, onion and carrot all chopped to the mashed potatoes
  5. add a scoop of humus and some salad cream and mix together
  6. [b]PREPARING THE TIGER PRAWNS[/b][br]
  7. wash your tiger prawns if you are using fresh and parboil for 4 minutes
  8. if your tiger prawns have been precooked then simply rinse thoroughly (I eat every part of prawns so I leave the head, tail and shell in tact)
  9. heat your oil in a frying pan and lightly fry the prawns in the oil when it is very hot for 4 minutes
  10. turn the tiger prawn on both sides allowing it cook on either side
  11. take prawns out of the oil and wipe with tissue paper or drain excess oil in a colander
  12. you now serve your delicious rehash Christmas left over
